In preparation for our trip to Montana on Thursday, we had some buffalo meat burgers. What are the health benefits over regular beef? Buffalo meat generally has less fat and fewer calories than most cuts of beef, and can be prepared in a similar manner. But buffalo meat is higher priced, and generally less available.
Per capita beef consumption in the U.S. is just under sixty pounds annually. The national average for buffalo meat is well under one pound. Buffalo meat is darker, and generally sweeter, cleaner tasting, and richer. The big difference is that buffalo meat does not marble. Beef is slightly lower in cholesterol, though buffalo meat contains more iron and calcium. And it is rather obvious they are grass-fed only and do not contain additives such as hormones, steroids or antibiotics.
Remember the song, Home on the Range? It was most recently recorded by John Denver. Before John, it was recorded by notables Porky Pig, Neil Young, Willie Nelson, and Bugs Bunny. Sam Malone and Woody Boyd sang it on Cheers in their fourth season. It is the state song of Kansas, and was written by Dr. Brewster Higley, and first published in 1873. When we sang it as kids, we changed the second line to “And I will show you a dirty house!”

We were fortunate to see many herds of cape buffalo in the Serengeti last summer. We saw one such herd escape a pride of lions on a luncheon hunt. As the lead lioness stalked the herd, she got a little too far upwind. As soon as the herd could smell the lions, they took off running. None of the adult lions could bring down a cape buffalo running at full speed.
I imagine that is more than you ever wanted to know about buffalo meat. I read where it should be cooked at a lower temperature (true) than beef, due to the lack of fat and marbling. Grilling should definitely be done by the indirect method. Buffalo roasts should be done at 275 degrees. Let me tell you that it was really delicious, better than beef!
We actually saw a herd of buffalo on our way back from the wedding reception in Hamilton, even though Ted Turner’s consortium sold a huge amount to the Chinese. We stayed the night in Missoula, before heading back home this morning from Kalispell. I think people were shocked that we showed up in Montana for the party. Then we told them we have been here since Thursday, went to Glacier yesterday, and drove the Going to the Sun Road. Some of the locals have not taken that scenic drive!
